You can adapt config/ruleset.xml.

My main issue is where to put the classes, if there was any standard for that

config/ruleset.xml is normally deprecated... the new one should be phpcs.xml on project root level.
In according to it u have to adapt the Development Config.

I don't know if there is a standard for that, I think not, but i would put it under own namespace in src folder

It mains that they are autoloaded if you put them into Sniffs/ root folder ( https://github.com/spryker-sdk/sdk-contracts/tree/master/Sniffs/ ).

I already did it in another place. I guess it works anywhere as long as you put the Sniffs folder in the same place where your ruleset definition is
